Eggless orange cake, easy and delicious recipe with fresh orange juice and no food colours. I always bake my cakes in a pressure cooker, this is the first time trying in Microwave oven. Most of the ingredients you can find in your kitchen.

- All purpose flour/Maida - 1.5 cups
- Baking powder - 1/2 tsp
- Baking soda – 1 tsp
- Sugar - 3/4 cup
- Orange juice - 1 cup
- Cooking oil - 1/3 cup
- Salt - a pinch
- Vanilla essence - 1 tsp
- Orange zest - 1/2 tsp (Use grated skin)
Method :
- In a wide bowl, sieve the flour.
- Add baking powder, baking soda and salt, and mix well.
- Add the orange zest to the flour mixture, and set aside.
- Meanwhile, grease a baking pan with oil or butter and sprinkle the flour all over the pan.
- In another bowl, mix sugar, oil and orange juice.
- Use a whisk and stir the mixture until the sugar dissolves well.
- Add the flour to the oil mixture and mix it with a spatula or whisk in one direction. (Do not over beat the mixture)
- Add in Vanilla essence.
- If you are baking in an oven, preheat the oven in convection mode at 180c for 10 minutes.
- If you try pressure cooker cooking, put salt in the cooker and cover keep it in medium flame for 10 minutes.
- Pour the batter into the baking pan and pat its bottom once for even distribution of batter.
- Now bake the cake in convection mode at 180c for 20-30 minutes.
- Check the cake by inserting a toothpick in the centre of the cake after 20 minutes. If it comes out clean or with little crumbs, the cake is done.
- If you find the wet batter in the toothpick, bake the cake for 2-3 minutes more.
- Invert the pan on a plate after the cake is cooled down.
