HOMEMADE SAMBAR POWDER RECIPE

Sambar is a lentil-based vegetable recipe cooked with a tamarind broth. Sambar contains sambar powder, a coarse spice mix made of roasted lentils, dried whole red chillies, fenugreek seeds, coriander seeds and sometimes asafoetida and curry leaves. Regional variations include cumin, black pepper, grated coconut, cinnamon, or other spices.

This Sambar Powder is easy to prepare and tastes delicious.

 Ingredients: 

  • Coriander seeds - 4 tbsp
  • Red Chilli - 17 nos 
  • Chana Dal - 2 tbsp
  • Urad Dal - 1 1/2 tbsp
  • Cumin seeds - 1 1/2 tbsp
  • Peppercorns - 1 tbsp
  • Fenugreek seeds - 1 1/2 Tsp
  • Mustard seeds - 1 1/2 Tsp
  • A few Curry leaves
  • Turmeric powder - 1/2 tbsp
  • Asafoetida powder - 1/2 tbsp
  • Coconut Oil - few drops 

Method : 


  1. Roast Coriander seeds till light brown in colour.
  2. Roast about long dried Red Chilli and keep it aside.
  3. Roast Chana Dal on medium flame.
  4. Roast Urad Dal until golden brown and place it over the other roasted ingredients. 
  5. Cumin seeds roast very fast. so be cautious & don't burn it
  6. Separately roast Black Peppercorns, Fenugreek seeds and Mustard seeds.
  7. Now add few drops of coconut oil and roast few Curry leaves.
  8. Now, turn off the stove & then add 1/2 tbsp of Turmeric powder and 1/2 tbsp of Asafoetida powder. Roast for few seconds and add it to the other ingredients. 
  9. Let the roasted ingredients cool down completely.
  10. Grind them into a fine powder.



Homemade Sambar powder is ready.  Let it cool down & store in an airtight container.

KATHIRIKAI PARUPPU CURRY / BRINJAL DAL CURRY

  • 3 Brinjal Chopped 
  • 1 Cup Toor Dal 
  • 2 Tablespoon Garlic Chopped 
  • 1 Onion Chopped 
  • 1 Tomato Chopped 
  • 1/2 Tablespoon Turmeric Powder 
  • 3 Dried Red Chilli 
  • 1/2 Teaspoon Mustard Seeds 
  • 1/2 Tablespoon Cumin Seeds 
  • Coriander Leaves 
  • Curry Leaves 
  • Salt to Taste 
  • 1 Tablespoon Coconut Oil

Step By Step Picture Instructions : 

  • Soak Toor dal for 10 minutes
  • In a pressure cooker, add the soaked toor dal with randomly chopped tomato and 1/4 tablespoon of turmeric powder and water 
  • Cook dal for 3 Whistles 
  • Mash the dal and keep aside 
  • In a pan, add coconut oil and heat the oil on medium flame 
  • Temper mustard, cumin and curry leaves   

  • Add dried red chilli 
  • Roast finely chopped garlic and fry until golden brown 
  • Add finely chopped onion and cook for 2 minutes
  • Add diced brinjal and mix well 
  • Add the remaining turmeric powder and mix well 
  • Add water required for the brinjal to cook 
  • Once brinjal is cooked, add the mashed dal and bring it to boil 


  • Garnish with chopped coriander and mix well 
  • Serve hot

PARUPPU RASAM RECIPE / DAL RASAM RECIPE

Rasam, is a South Indian soup, traditionally prepared using tamarind juice as a base, with the addition of tomato, chilli pepper, pepper, cumin and other spices as seasonings. It is eaten with rice or separately as a spicy soup. In a traditional meal, it is a part of a course which includes sambar and curd. 
Rasam has a distinct taste in comparison to the sambar due to its own seasoning ingredients and is usually fluid in consistency. Parupu rasam is cooked with dal and tomato stock. I learned this recipe from my mom, the best part of this rasam is the mild sweetness from jaggery and the ghee flavour.

  • 1/4 cup Toor Dal 
  • Tamarind Juice (lime sized ball)
  • 1 Tomato

Step By Step Picture Instructions : 

  1. Soak toor dal in water for 15 minutes, pressure cook with turmeric powder. 
  2. Mash it well and keep aside
  3. Boil water in a separate pan, add 1/4 tomato and cook for 5 minutes 
  4. Mash the tomato well and keep aside 
  5. To the mashed tomato, add tamarind juice, rasam powder, turmeric powder and salt needed



  6. Boil on low flame until the raw flavour goes 
  7. Add the mashed toor dal along and 1 cup of water 
  8. When the rasam starts to boil add the remaining tomato pieces, jaggery and coriander leaves 
  9. Remove from heat ( Don't overcook rasam) 
  10. In a separate pan, temper mustard seeds cumin seeds, dried red chilli and curry leaves in ghee 
  11. Pour the tempering over the rasam. 
  12. Serve hot

GARLIC DAL RECIPE


Garlic dal is an easy and delicious recipe, can be served with steamed rice or roti. Usually, we add garlic while cooking dal, but in this recipe lot of garlic added.






Garlic is widely used around the world for its pungent flavour as a seasoning or condiment.
The garlic plant's bulb is the most commonly used part of the plant. With the exception of the single clove types, garlic bulbs are normally divided into numerous fleshy sections called cloves. 
Garlic cloves are used for consumption (raw or cooked) or for medicinal purposes. They have a characteristic pungent, spicy flavour that mellows and sweetens considerably with cooking.Garlic may be applied to different kinds of bread, usually in a medium of butter or oil, to create a variety of classic dishes, such as garlic bread, garlic toast, bruschetta, crostini and canapé.   1. Soak toor dal for 10 minutes

  3. Once pressure is released, mash the dal 
  4. In a pan, temper cumin, mustard seeds, dried red chilli and curry leaves in coconut oil
     
  5. Add slit green chilli and ginger, roast for a  minute
  6. Add garlic chunks and roast until golden brown 
  7. Add finely chopped onion and saute 
  8. Add the mashed dal and bring to boil 
  9. Add 1/4 cup of water and boil for 5 minutes 
  10. Add chopped coriander leaves to the dal 
  11. Serve hot 
I served garlic dal with steamed rice.

MUTTAIKOSE PARUPPU CURRY / CABBAGE DAL CURRY

This is a healthy and tasty south Indian version of dal recipe prepared with cabbage and moong dal. Can be served with hot steamed rice or any roti. This recipe is extremely simple and can be prepared within minutes by pressure cooking moong dal and chopped cabbage with some spices.

Cabbage is rich in antioxidants, including vitamin C, anthocyanins, and sulfur, since it is a cruciferous vegetable. Antioxidants play a major role in skin health and the general toning and improvement of the body in response to the ageing process. Free radicals can be an underlying cause of wrinkles, skin discolouration, spots, and many other conditions.   1. Soak moong dal soaked for 30 minutes. 
  2. In a pressure cooker, add the soaked moong dal, tomato, green chilli, garlic, turmeric and water 
  3. Pressure cook the dal for 3 whistles 
  4. Mash the dal well and add salt 
  5. Add chopped cabbage and bring to boil 
  6. Add chilli powder and cook for 5 minutes 
  7. Temper mustard, cumin seeds, few curry leaves and dried red chilli in coconut oil 
  8. Pout the tempering over the dal and mix well.
  9. Serve Muttaikose Paruppu Curry / Cabbage dal curry with hot steamed rice.
