Eggless Orange Cake

Eggless orange cake, easy and delicious recipe with fresh orange juice and no food colours. I always bake my cakes in a pressure cooker, this is the first time trying in Microwave oven. Most of the ingredients you can find in your kitchen.



Ingredients : 


  • All purpose flour/Maida - 1.5 cups 
  • Baking powder - 1/2 tsp
  • Baking soda – 1 tsp
  • Sugar - 3/4 cup
  • Orange juice - 1 cup
  • Cooking oil - 1/3 cup 
  • Salt - a pinch
  • Vanilla essence - 1 tsp 
  • Orange zest - 1/2 tsp (Use grated skin)

Method : 
  1. In a wide bowl, sieve the flour. 
  2. Add baking powder, baking soda and salt, and mix well. 
  3. Add the orange zest to the flour mixture, and set aside. 
  4. Meanwhile, grease a baking pan with oil or butter and sprinkle the flour all over the pan. 
  5. In another bowl, mix sugar, oil and orange juice. 
  6. Use a whisk and stir the mixture until the sugar dissolves well.
  7. Add the flour to the oil mixture and mix it with a spatula or whisk in one direction. (Do not over beat the mixture) 
  8. Add in Vanilla essence.  
  9. If you are baking in an oven, preheat the oven in convection mode at 180c for 10  minutes. 
  10. If you try pressure cooker cooking, put salt in the cooker and cover keep it in medium flame for 10 minutes. 
  11. Pour the batter into the baking pan and pat its bottom once for even distribution of batter. 
  12. Now bake the cake in convection mode at 180c for 20-30 minutes.
  13. Check the cake by inserting a toothpick in the centre of the cake after 20 minutes. If it comes out clean or with little crumbs, the cake is done.
  14. If you find the wet batter in the toothpick, bake the cake for 2-3 minutes more.
  15. Invert the pan on a plate after the cake is cooled down.
