Pudina / Mint Thogayal, best side dish for curd rice or any other vegetarian meal. This thogayal is prepared without coconut and very easy recipe. At the same time delicious recipe.
Ingredients :
- Fresh Pudina/mint leaves - 1 cup
- Urad dal - 2 Tsp
- Dry red chilly - 5 nos
- Garlic - 1 no
- Cumin seeds - 1/2 tsp
- Curry Leaves - 1 string
- Coconut oil - 1 Tsp
- Salt for taste

- Temper cumin seeds in coconut oil
- Add dry red chilli and fry for 30 secs
- Add garlic and curry leaves
- Add urad dal and roast till golden brown
- Add fresh pudina/mint leaves and fry for a minute
- Allow it to cool down
- Transfer the roasted items into a mixer and add salt required
- Grind into a coarse mixture by adding little water
- Serve with steamed rice
