Ivy gourd/Kovakkai, also known as the scarlet gourd, is a tropical vine. Ivy gourd help regulate blood sugar levels. Some research supports that compounds in the plant inhibit glucose-6-phosphatase. Glucose-6-phosphatase is one of the key liver enzymes involved in regulating sugar metabolism. Therefore, ivy gourd is sometimes recommended for diabetic patients. Kovakkai Varuval, a simple and my most favourite recipe.
Ingredients :
- 1 Cup Kovakkai / Ivy Gourd
- 1/4 Teaspoon Turmeric Powder
- Salt to taste
- 1/2 Tablespoon Chilli Powder
- 1/2 Tablespoon Sambar Powder.
- 1/4 Tablespoon Coriander Powder
- 1/4 Teaspoon Mustard Seeds
- 2 Tablespoon Coconut Oil
- Curry Leaves

Step By Step Picture Instructions :
- Chop the edges of the kovakkai
- Cut the kovakkai lengthwise and keep aside
- Temper mustard seeds and curry leaves in coconut oil
- Add the kovakkai pieces and saute for 3 minutes
- Add turmeric powder and salt
- Mix well and roast for a couple of minutes
- Add chilli powder, coriander powder and sambar powder
- Mix well and roast on medium flame until crispy
- Serve hot
