KOVAKKAI VARUVAL / IVY GOURD FRY

Ivy gourd/Kovakkai, also known as the scarlet gourd, is a tropical vine. Ivy gourd help regulate blood sugar levels. Some research supports that compounds in the plant inhibit glucose-6-phosphatase. Glucose-6-phosphatase is one of the key liver enzymes involved in regulating sugar metabolism. Therefore, ivy gourd is sometimes recommended for diabetic patients. Kovakkai Varuval, a simple and my most favourite recipe. 


Ingredients : 

  • 1 Cup Kovakkai / Ivy Gourd
  • 1/4 Teaspoon Turmeric Powder 
  • Salt to taste 
  • 1/2 Tablespoon Chilli Powder 
  • 1/2 Tablespoon Sambar Powder. 
  • 1/4 Tablespoon Coriander Powder 
  • 1/4 Teaspoon Mustard Seeds 
  • 2 Tablespoon Coconut Oil 
  • Curry Leaves

Step By Step Picture Instructions :

  1. Chop the edges of the kovakkai 
  2. Cut the kovakkai lengthwise and keep aside 
  3. Temper mustard seeds and curry leaves in coconut oil 
  4. Add the kovakkai pieces and saute for 3 minutes
     
  5. Add turmeric powder and salt 
  6. Mix well and roast for a couple of minutes 
  7. Add chilli powder, coriander powder and sambar powder 
  8. Mix well and roast on medium flame until crispy 
  9. Serve hot
